Coles have layered the flavours of Christmas into one dreamy dessert to create their Gingerbread Tiramisu 🎄😋

Gingerbread tiramisu
Serves 6 | Prep 45 mins (+ cooling time & 4 hrs or overnight setting time) | Cooking 20 mins

Ingredients:
8 eggs, at room temperature
2/3 cup (150g) brown sugar
1 tsp vanilla extract
1 cup (150g) plain flour
3 tsp ground ginger
1 tsp baking powder
1 tsp ground cinnamon
1/2 cup (110g) caster sugar
250g mascarpone, at room temperature
1/3 cup (80ml) rum
300ml thickened cream
1/3 cup (15g) instant coffee
Dark chocolate curls, to serve
