Fruit mince pie rocky road
Serves 24 | Prep 10 Mins (+ 1 hour standing time) | Cook 5 Mins

Ingredients:
2 x 375g pkts Coles White Chocolate Buttons
360g Coles Apricot & Peach Pies
190g pkt Allen’s Frogs Alive
1/2 cup (40g) Coles Shredded Coconut
75g Coles Marshmallows, white only
1 cup (35g) Coles Rice Puffs
1 tbsp extra Coles Shredded Coconut, toasted
8 Coles Meringue Kisses, halved

Method:
1. Grease an 18cm x 28cm (base measurement) slice pan and line the base and sides with baking paper, allowing the sides to overhang. Place chocolate in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Use a metal spoon to stir for 5 mins or until chocolate melts and is smooth.

2. Cut 4 of the pies into quarters. Reserve 8 frogs. Combine the quartered pies in a large bowl with the remaining frogs, coconut, marshmallows and rice bubbles. Add the melted chocolate and gently fold until just combined. Spoon into the prepared pan and sprinkle with toasted coconut, reserved frogs and meringues. Cut the remaining pies into eighths and arrange on top of the slice. Gently tap the pan on the bench a few times to settle the ingredients. Set aside for 1 hour to set. Cut into pieces to serve. ...
